The Ultimate Pizza Hut Pan Pizza Clone Copy!

People have asked for the recipe to my pan pizza video so here you go,

On a standard Friday night, I make 3 Medium 12 Inch Pizzas so here we go; I will list baker's percentages below so you can scale the recipe to fit your needs.

  1. 855G Bread Flour 100%

  2. 510G Water Warm 60%

  3. 14G Salt 1.6%

  4. 10G Yeast 1.1%

  5. 38G Oil 4.4%

  6. 20G Sugar 2.3%

  7. 80G Powder Milk (Instant-or non) 9.3%

Total : 1527G 178.7%


Makes 3X ~509G Dough Balls.


Roll out to about 10 inches. Add 1/4 - 1/3 cup oil to pan. Place 10-inch dough in center. cover with plastic wrap.


Place in oven with light on and add boiling water to lower rack. let proof for 1 hour in warm oven.


Take out refrigerate for at least 1 hour before use.


Take out of oven if it has not spread to fit pan push down with fingers until full size.


Top with Sauce, I can make a post about my sauce if you like.


Add ~ 180 G Cheese in two steps first half cheese then toppings then other half of cheese.


How to Bake


Preheat oven to 460F.


Place rack in middle


When ready to bake set oven to 485F and put pizza in right away so the pre heater is on when the

pizza is in the oven for 3 minutes.


(This will make the bottom element come on full power for the first 3 minutes of the bake.)


After 3 minutes set to Low Broil and give another 6 minutes.


Then set oven to High Broil for one more minute or maybe 1.5.


By using the oven in broil and pre heat mode your getting more power out of your standard oven. (You get more Radiant heat and less convection heating out of your oven think heat from the sun vs heat from warm air)


Total time in oven 10min -10.5.


Important these baking times are for a standard American/Canadian electric oven. Using a dark anodized aluminum pan. like this,

Can you freeze this dough after the 2 day rise ? Then take out a ball, thaw it at room temp , put in pan, and let it rise for 2 hours ?

Good stuff...but I'm confused about the baking instructions...could you clarify a little, please.


- put the pizza in the oven while preheating from 460 to 485?

- the items in red confused me a little...

- How long is the bake before using the broil?


Preheat oven to 460F.

Place rack in upper middle


- When ready to bake set the oven to 485F and put the pizza in right away so the preheater is on (when the pizza is in the oven for 3 minutes.)

- Then turn oven to Low Broil and 6 more minutes. If you need to, by eye, broil on high for an extra 1 minute or (10 total.)


Forgive my inquiry, I may just…

Thanks for reading, I have updated the post I hope its more clear. Yes 10 minutes in total. 3 minutes with the oven in preheat mode going from 460-485 then low broil then high broil (you get more radiant heat that way into the pizza.)
